Basic Food Safety

Basic Food Hygiene is a course designed to impart adequate knowledge in the safe handling of food and to maintain relevant good hygiene practices. This course is a mandatory course for all food handlers, food transport drivers, stewarding staff, house keeping staff, food transport drivers and all the people involved directly with food in hotels, restaurant’s, café’s, food manufacturing companies, catering companies, clubs, hypermarkets, hospital kitchen’s, food warehouse and stores, cafeteria’s and meat and fish stall operators in the Emirate of Dubai.  

Course Objective 

. To have a sound understanding of basic food hygiene practices  

. To develop a food safety commitment towards the organization 

. To develop a good understanding of local food hygiene regulations  

. To provide adequate knowledge to all food handlers to avoid food poisoning, food spoilage and food borne diseases. 

Course Content 

► Introduction to Food Safety 
    ► Microbiological, physical, chemical and allergenic hazards and controls 

    ► Temperature controls and food safety Management 
    ► Food Poisoning and Food Borne Illness 
    ► Contamination Hazards And Controls 
    ► Food Preservation and Shelf Life 
    ► HACCP from Purchase to Service 
    ► Personal Hygiene 
     ► Cleaning and Disinfection 
    ► Food Pests and Control 

Duration: 6 hours 

Validity: One year 

This course is followed by a 30-minute multiple choice exam. Successful Candidate’s will receive a certificate in Basic Food Safety   

Training Prerequisites  

This is a mandatory course for all food handlers which is a requirement by the food safety department of Dubai Municipality. All the delegates attending the course must have a valid ID proof and the company sending the trainees must be registered with Dubai Municipality’s Food Watch 

Level 3 Person Incharge  

The Person in-charge (PIC) course is designed to provide food safety and hygiene knowledge for Managers, supervisors, head chef’s or anyone directly responsible for high risk food related operation in food service industries like Hotels, Catering, Hypermarkets and food manufacturing companies. This course is a mandatory requirement by the Food safety department of Dubai Municipality. The Person In-charge (PIC) is accountable to both the employer and Dubai municipality for ensuring that all the employees are complying to the established food safety practices. The PIC certificate is an important document that should be kept in the premises of the food operation and shall be produced on request by any legal authority. 

Course Objective:  

. To enable managers or supervisors to identify any deviations in practices and to take adequate and corrective actions  

. To develop and implement policies and procedures to prevent food borne illnesses.  

. To Schedule in-house inspections using the PIC checklist periodically to ensure that the food safety policies and procedures are followed.  

. To make sure that no employees are put to work before they have completed training for their respective roles.  

. To ensure necessary actions are taken to the points raised during the inspections by the Food control department.

This course is followed by a 2-hour multiple choice exam conducted by the respective awarding bodies approved by Dubai Municipality Food Safety Department. Successful Candidate’s will receive a certificate in PIC by the respective awarding body

This is a mandatory course for Managers, supervisors, head chef’s or anyone directly responsible for high risk food related operation which is a requirement by the food safety department of Dubai Municipality. All the delegates attending the course must have a valid ID proof and the company sending the trainees must be registered with Dubai Municipality’s Food Watch 

Level 2 Personal In charge

This course is a mandatory requirement by the Food safety department of Dubai Municipality. The Person In-charge (PIC) is accountable to both the employer and Dubai municipality for ensuring that all the employees are complying to the established food safety practices. The PIC certificate is an important document that should be kept in the premises of the food operation and shall be produced on request by any legal authority.
